Industrial vegetable oils (soybean, canola, sunflower) are a popular health worry. On independent HUMAN evidence the 'seed oils are toxic' thesis is largely unsupported: claims that linoleic acid drives obesity, inflammation, or insulin resistance are refuted, and the heart-disease / fried-aldehyde harms lean against or are contested. The real kernels: the oxidation chemistry IS real in the lab, refining produces trace contaminants, and our body-fat linoleic acid has risen with intake — but none is yet shown to cause disease at normal dietary doses.
